Optional: recipe ingredients or quick steps
Ingredients:
1 Tablespoon avocado oil
2-3 medium garlic clove, minced
1 inch piece of ginger, grated
1 teaspoon turmeric powder
2 teaspoon cumin seeds or 1 tsp cumin powder
1 medium red or yellow onion, diced
2-3 medium carrots, diced
1 cup potato, diced (use red potato or yukon gold, leave skins on)
1 cup veggie broth or water
½ medium cabbage, (finely chopped)
1 cup frozen peas or any bean of choice
1 teaspoon salt
1 teaspoon black pepper, freshly ground

Instructions:
In a large pan, heat avocado oil on medium heat
After 30 seconds, add minced garlic, ginger, turmeric, and cumin seeds. Make sure to add these to the oil before it gets too hot, or it will splatter!
Saute for roughly 30 seconds to toast the spices and bring out the flavour.
Now, add the chopped onion and saute for about 2 minutes until the onion gets golden brown.
Now add carrots, potatoes, veggie broth or water and mix well to infuse with spices. MMM MMM!
Cover and cook for 10 minutes on medium heat. Then, open and check if the carrots and potatoes are cooked by piercing them with a fork. If not, cook for a few more minutes until they're soft.
Once they are cooked, stir in the cabbage, peas, and salt and pepper (to taste) and cook covered again until the cabbage is properly cooked, but not too long that it becomes mushy (roughly 5-8 minutes).
