This spinach potato soup is made with fresh spinach , diced potatoes, sauteed onions , garlic, herbs , spices and coconut milk. The texture is great, It's delicious , healthy, flavorful and is healthier than chicken soup.

Ingredients :
6 ounces spinach.
1 yellow potato , diced.
1 can coconut milk.
3 garlic cloves, diced.
1 small yellow onion, diced.
1 tbsp coconut oil.
1/4 tsp cayenne pepper.
1 tsp garlic and herb spices.
pinch of salt.
Instruction
- In a medium saucepan, bring to boil 3 cups of water, then add the diced potatoes.
- Cook until tender, drain the water off, set aside to cool.
_ Heat 1 tbsp coconut oil in a medium saucepan.
- Sauté the onions and garlic, about 3 minutes . Remove from pan , set aside to cool.
- Add the spinach, coconut milk, potatoes ,garlic and herb spies, cayenne pepper, sautéed garlic and onions, salt to taste and blend until smooth .
- Pour the mixture into a medium pot and cook on medium - low heat for about 8-10 minutes , stirring occasionally until smooth and creamy.
- Serve hot or cold.
